Pineapple Salsa Recipe

My easy Pineapple Salsa stirs together in minutes with a few simple ingredients. Use diced fresh pineapple and veggies with a splash of lime juice for a quick and delicious appetizer, side dish, or topping!

Ingredients

2 cups finely diced fresh pineapple (400g)
½ red bell pepper finely chopped (80g)
⅓ cup finely chopped red onion (55g)
1 jalapeño minced
2 tablespoons lime juice
¼ teaspoon salt
⅓ cup fresh cilantro chopped (15g)

Instructions

In a medium bowl, combine the pineapple, red bell pepper, red onion, jalapeno, lime juice, and salt. Mix well to combine. Let sit for 5 to 10 minutes to marinate, then mix again.
Add the chopped cilantro and season with more salt and lime juice to taste.

Notes

If you want to make this several hours before serving, I recommend holding the cilantro until you are closer to serving. It can become soft as it sits in the salsa.
